Responsibilities

  • Coordinate back and front restaurant operations.
  • To oversee entire operation of all F&B departments: ensuring that all areas of work are in good hygienic condition before commencing food preparation.
  • Ensure services are offered with speed, timely and efficiently.
  • Plans menus by consulting with chefs; estimates food costs and profits; adjusts menus.
  • Coordinating and organizing for all outside catering activities.
  • Supervising restaurant employees making sure they report on time and that they handover at the end of every shift making sure there are no unpaid bills.
  • Ensuring that cooking and serving equipment are well cleaned, sanitized and stored in hygienic
    conditions.
  • Ensure that dispatches for breakfast and lunch leave on time and in good quality.
  • Ensuring compliance with licensing, hygiene and health and safety legislation/guidelines.
  • Handling customer inquiries and following up on unattended customers and getting customers feedback.
  • Regularly appraise staff performance and provide feedback to improve productivity on monthly basis.
  • Ensure compliance with sanitation and safety regulations within the restaurant.
  • Manage the restaurant’s good image and suggest ways to improve it.
  • Control operational costs and identify measures to minimize/eliminate wastage.
  • Schedules periodic food and beverage service staff meeting and training to ensure correct interpretation of policies and obtain feedback from staff members.
  • Check and report weekly and annual revenues and expenses to the Director operations.
  • Keep inventory records of kitchen utensils, cleaning products, furniture and equipment.
  • Arrange for maintenance and repair of equipment.
  • Ensure every item served is billed and close the shift with post terminal.
  • Supervise daily stock taking of drinks.
  • Coordinate check and sign daily records i.e. store, restaurant, bar and pastry.
  • Ensure general staff hygiene and grooming.
  • Any other duties as assigned by the senior supervisor.

Requirements

  • Must have a diploma or a degree in hospitality or any other related field from a recognized
    academic institution.
  • Good in English and Swahili.
  • Previous work experience is an added advantage.
